Today I am thankful for the show "The Chew." I was watching the show the other day and Carla Hall made a simple ice cream cake. I went to the store to get the ingredients the next day. I must have a weak mind! When I taught at Chichester High School, I shared my room with another reading specialist. She ate lunch while I was teaching. She always brought the greatest stuff for lunch and weak-minded me often went and bought those things on my way home from work! I eat mangoes because of her, I had never eaten a mango before in my life!
I am not really even an ice cream lover. For some reason, I just had to make this simple ice cream cake. It was so simple and really tasty. How can you go wrong with ice cream, whipped topping, nuts, chocolate syrup and peanut butter? I even added caramel to the toppings. It was tasty, but very rich! Each slice of the cake is probably about 5 billion calories!
Spray an 8 1/2-inch by 4 1/2-inch loaf pan with cooking spray and line with parchment paper, leaving a 2-inch overhang on both sides. Set aside.
In a medium-sized bowl, add peanut butter and using a spatula fold in the whipped topping just until fully combined.
Unwrap 3 sandwiches and place 2 sandwiches into the loaf pan side by side with the flavors opposite Cut the third sandwich in half and place both halves into the remaining empty space of the loaf pan. Using an offset spatula spread 1/2 of the topping mixture over the top of the sandwiches, covering completely.
Repeat the next layer with 3 more sandwiches, the same layer as the first, and place them so that the flavors are in the reverse direction of the first layer. (To alternate flavors.) Push down on sandwiches gently. Spread the remaining topping over the top of the sandwiches and cover entire layer completely.
Garnish the top with chopped pecans and mini chocolate chips. Cover with plastic wrap and place in the freezer until firm, about 1 hour.
Remove from freezer, uncover and using the parchment, lift to remove from the pan. Using an offset spatula spread topping to any spots that may need extra coverage. Slice and serve.
Today I am thankful for coming home to these beautiful flowers from my friend Debbie and her family! I LOVE flowers. These flowers are breathtakingly beautiful and colorful! It was a wonderful surprise! These are the most fragrant flowers ever, they filled my kitchen with a lovely fragrance. Debbie is also a bereaved mom. We met in an online bereavement chat room the year that we both lost our teenage children, 2001. Debbie lost her 17 year old son Peter in a snowmobile accident. Debbie is so kind and sweet and compassionate and she is funny as can be! We have spent a lot of time in person too! It is nice to feel so loved. I have the best friends ever! I really do. Today I got my hair cut at the salon where Olivia works. I am thankful that I got to see her at work and meet some of her co-workers. I asked for her as my shampoo girl. She did a great job! Everyone there really likes her. I met the owner and he said he enjoys having he work here because he feels her enthusiasm for cosmetology. The woman who cut my hair said the same thing. They enjoy listening to the things she tells them she is learning in cosmetology school. It's nice to see your adult kids successful! I got a great haircut, I just love it. Of course, I almost dropped dead when I was told the price of $80.00! I gave the beautician a tip of $20 and I left a tip of $10 for Olivia. Olivia is really in her element there. Today I am thankful for my daughter Olya. We adopted Olya from Ukraine in 2009.. Olya with her bio relatives Olya with a friend at her home in Ukraine She was ten and a half years old when we adopted her. My friend Maggie had found her for me in Ukraine, She knew I wanted to adopt another girl in the 10-11 year old age range. Olivia was driving me crazy, she always wanted to be doing something. She really wanted a sibling! I told Dan that we needed to adopt another girl close to Olivia's age so she would have a sibling to grow up with. Dan was fine with it, I think he was excited to go back to Ukraine! Maggie works for Frontier Horizons, a hosting organization that brings orphans to the U.S. and other countries for a cultural experience. Maggie visits orphanages and selects children for hosting.
